Gooey chocolate brownies

My basic recipe for gooey chocolate brownies, i found these a bit of a challenge at first as you have to take them out the oven when the outside is crusted but the middle is still gooey and very moist as brownies carry on firming up for a few hours after taking out of the oven, they are best left overnight at room temperature to settle and firm.

Be brave when taking them out the oven, even if you take them out too early they will be edible just extra gooey and more pudding like( but gorgeous warm with clotted cream!)

They can also be ‘tarted’ up with any bits and bobs you wish to put in the mixture a few favourits are cadbury cream eggs, squashed in the top before putting in oven, oreo cookies in mixture or fudge pieces or go for it and put all three!

Just grab whatever you fancy and bung it in!

Ingredients

  • 2 handfuls any sweets i.e smarties, minstrels, maltesers etc...
Servings: 12"x8" tin
Instructions
preparation
  1. grease and line tin with parchment paper preheat oven to 180 degrees centigrade /gas 4 put a whisk attachment onto a mixer to readiness.

  1. place all dark, 56g of milk and all butter into a large bowl, heat on high in micro on 30 second bursts until melted.
  2. put eggs in mixer bowl and whisk until frothy
  3. add sugar, mix again to combine
  4. add melted chocolate/butter mixture and whisk again. Add vanilla,salt,cocoa,flour and whisk until all smooth and gorgeous.
  5. scrape sides of bowl and whisk again. Add remaining 113g of milk chocolate and fold into mixture with a spoon.
  6. This is when you add any extras you want like cookies, more chocolate, nuts ,smarties, cream eggs etc... i usually put half the mixture in the tin, lay my goodies in, then spread the rest on top.
  7. Make sure its evenly spread.
  8. pop in oven, middle shelf.
  9. cook for approx 30-40 mins depending on how gooey you require them, as i said earlier, there's no wrong way of doing this, the earlier you remove them the more moist they will be. but don't take them out before 30 mins else they will be raw!
  10. once the cooking time is finished, leave in tray and do not touch them, they are best covered with a tee towel and left overnight to rest before any attempt at cutting them. once cool you can decorate with melted chocolate if you prefer or any other favourite topping.
  11. Enjoy with a cup of tea, or as a dessert with clotted cream...yummy !
